Fish curry, a thick gravy based dish prepared with freshly caught sea fish, is unique to the Indian sub-continent. The dish is prepared by tempering a special blend of roasted and ground spices in oil along with an onion-tomato paste to which a pungent condiment such as tamarind pulp or kokum is then added. This gives the dish a tangy flavor that compliments the hotness of the spices and natural saltiness of the fish.

Eaten mainly with rice as the main course of a meal, fish curry is also relished with dosas (rice pancakes), idlis (steamed rice cakes), kappa (boiled tapioca) and a variety of other dishes. Although made from the same basic ingredients and spices, the addition of a few local ingredients like tamarind pulp, coconut cream, kokum etc. gives the fish curry of each region a unique and distinct flavor. Sometimes the variety of the fish used also determines the method of preparation. For example, the hilsa fish, a river fish popular in West Bengal is traditionally prepared using mustard oil, while Karimeen, a fish popular in the waters of the Arabian Sea, is cooked by wrapping it in banana leaves.
