Garam masala, is a dry mixture of various ground spices, that is unique to India. Similar to the Chinese five-spice mixture or the American tobasco sauce, garam masala can be used in a variety of Indian dishes, including gravies, rice pilafs and meat roasts. This makes it a must-have condiment in almost every Indian kitchen. Traditionally garam masala is prepared by dry roasting the spices and then finely powdering it with either a mortar and pestle or an electric grinder. However, garam masala is now commercially available making it easier for the modern household.

In the preparation of gravies and non-vegetarian dishes, the garam masala powder is usually added directly to the cooking oil or ghee (rarified butter), in the early stages of the cooking process. However, during the preparation of rice pilafs or roasted meat the garam masala powder is generally sprinkled on the dish just before serving. Doing this gives the dish a strong and fragrant aroma.
