Fish biriyani, a unique twist on the regular biriyani, uses fresh fish instead of mutton or chicken. However, the texture and flavor of the fish combined with fewer spices, imparts a very different taste than what you would expect from a traditional biriyani. Popular along the coastal areas of Kerala, fish biriyani generally contains locally grown spices such as nutmeg, cloves, cinnamon and cashews and is milder in taste and flavor. Fish biriyani is also mostly made with Jeerakasala, a locally grown variety of rice, instead of the popular Basmati rice.

The credit for the creation of fish biriyani, is generally attributed to those living on the Malabar Coast of India. An innovative take on the traditional mutton biriyani, fish biriyani was invented due to the abundance of fresh fish found in the coastal waters. Fish biriyani can be prepared with most varieties of local fish, but generally King fish/Seer fish is preferred. The cooking method is similar to mutton biriyani where the rice and fish, along with the spice masala, is pre-cooked separately before being steamed together to infuse the flavors of the spices into the rice. Shrimp biriyani, similar to fish biriyani makes use of fresh shrimp instead of fish.
