Mutton biriyani, a one-dish rice platter made of basmati rice, mutton, ghee and select spices, is unparallel in both taste and popularity all across India. An interesting note on mutton biriyani!
There are many interesting legends surrounding the origins of mutton biriyani, although almost all of them attribute its invention to the Royal Mughal kitchens. One legend says that biryani was invented as a means to feed Emperor Akbar's vast army. The cooks used to layer partially cooked mutton, rice and fragrant spices in large pots, seal the pots with flour and place it under dum (hot coals). This would then be left to slow cook for three to four hours, allowing the flavors to blend into the dish now giving it its unique taste and flavor. The hot coals not only helped in the flavoring process but also kept the biriyani warm until the tired soldiers returned to camp after a long day's march.
