Sambar is a very popular South Indian vegetable dish. It is a lentil stew boiled with seasonal vegetables and spiced with a finely ground powder of various blended spices. Traditionally, sambar is served with steamed rice as the first course of the lunch meal. It also makes its appearance for breakfast, dinner or evening tea when it is served as an accompaniment to be eaten with idlys (steamed rice cakes), dosas (rice pancakes) and vadas (lentil doughnuts). Sambar-idly and sambar-vada, are also popular dishes where the idly or vada is soaked in the sambar before being served.
The special taste of the sambar comes from the sambar powder that is added to the stew while boiling. A variety of dried herbs and spices are dry roasted and then finely ground into a powder, which is then stored and added to dish during preparation. Sambar powder can be prepared at home, or purchased as a ready-to-add masala. Storing the powder in an airtight glass container, away from sunlight can keep it fresh for up to six months.
An interesting anecdote about sambar!
There is an interesting legend about the dish sambar, whose origins are attributed to the Thanjavur Maratha ruler Shauji. The ruler had a special liking for a dish called amti, whose main ingredient was kokum, an ingredient brought to the Southern kingdom from the Maratha homeland. Once, when the supply of kokum had run out, Shauji decided to use tamarind pulp, a local ingredient famed for its sourness. The experiment that used pigeon peas, vegetables, spices and tamarind pulp, was enjoyed by the court and named sambar, after the guest of the day, Sambhaji. (Source: Wikipedia)
