Coriander (Coriandrum sativum), belonging to the family Apiaceae, is also commonly known as cilantro or Chinese parsley. While the fresh leaves of the plant are used as an herb, the dried seed is used as a spice and as a main component in Indian curry masalas.
The coriander plant has been cultivated since the Early Bronze Age and its existence has been mentioned in the Old Testament. The plant which thrives in naturally humid climates grows up to 50 cms (20 inches) in height and produces small dry, round fruits that measure around 3–5 mm (0.12–0.20 inches) in diameter.
Uses of coriander
As a condiment: The use of coriander leaves and powdered coriander seed is commonly seen in Indian, South and Central Asian, Mexican, Middle Eastern, Mediterranean, Chinese and African cuisines. While the leaves are mainly used as a seasoning agent, the powdered seeds are used for thickening gravies, sausage making and adding flavor to processed foods like bread, beer and pickled vegetables. Roasted coriander seeds are also eaten as a snack in some parts of the world.
For general health: Coriander is known for its anti-inflammatory properties in traditional Indian medicine. The seeds are boiled in water and drunk as an indigenous medicine for colds. Recent research has also discovered that the regular intake of coriander helps in lowering cholesterol and stimulating the secretion of insulin. The volatile oils found in coriander are rich in beneficial phytonutrients that are essential in healing. Coriander also contains antibacterial compounds that can work as a safe and natural means of fighting harmful Salmonella bacteria.
Selection and storage of coriander
While many varieties of coriander are available in the market, it is better to choose organically grown coriander as this will ensure that it has not been irradiated. Furthermore, it is wiser to purchase whole coriander seeds and grind them yourself, as coriander powder loses its flavor quickly. Before grinding briefly roast the seeds on a dry pan as this will enhance the flavor and aroma.
Whole coriander seeds stay fresh for about one year, while ground coriander retains its freshness for about four to six months. Coriander is best stored in an opaque and airtight glass container in a cool, dark and moisture free environment.
